I came up with this when i knew the deliciousness of Greek yogurt in deserts i made such as protein pudding, chocolate protein cake and i thought, why not make protein cookies using Greek yogurt but this time, i didn’t add any protein powder in contrast to my other two recipes but the result came out to be magnificent.

These are simple 4 ingredient Greek yogurt cookies with each cookie containing about 7 grams of protein and just a plenty of 67 calories. As we use Greek yogurt in this recipe, there is no need for protein powder to be added. Greek yogurt has become one of my favorite foods in recent days because of its high protein content, low calorie count, healthiness, versatility and deliciousness. It is a perfect ingredient to be added in many recipes.

This recipe for low-fat protein cookies is really simple using 4 simple ingredients that are normally available. No need for protein powder as we use Greek yogurt. You can easily find all the ingredients in the grocery store but in case you lack something, I am adding a list of alternatives to the recipe.

Here is the list of all ingredients you require to make protein cookies with Greek yogurt:

  • Greek Yogurt: This simple healthy protein cookie recipe can be made either with low or full-fat Greek yogurt. As an alternative you can use Skyr, quark or any plant based yogurt you prefer.
  • Almond Flour: To make protein Greek yogurt cookies that have a low calorie count and fats, use defatted almond flour. You can use full-fat almond flour or even oat flour in case you can’t find almond flour.
  • Granular Sweetener: My recipe uses erythritol as a calorie-free and sugar free option of granular sweetener. For alternatives, use your favorite granular sweetener, even coconut sugar or brown sugar.
  • Egg: Egg adds taste and serves the purpose of binding the dough but these are not recommended if you are making protein cookies with Greek yogurt that are low in calories. Use 60 ml (¼ cup) of egg whites instead of eggs.

Leaving these aside, You can add some extra ingredients to level up your protein cookies. Following is the list of some materials:

  • Vanilla Extract: Make sure to add ½ teaspoon of vanilla extract to enhance the cookie flavor and believe me, it takes your cookie game to the next level.
  • Sea Salt: A hint of salt will balance the sweetness level and enhance the taste of your Greek yogurt protein cookies.
  • Chocolate Chips: To make healthier protein cookies, use extra dark chocolate chips without any added sugars but feel free to substitute with any other chocolate chips you prefer.
  • Chopped Nuts, Almonds, and Seeds: Add some chopped nuts and seeds if you want to make some crunchy cookies. 

To add extra amount of protein in the cookies, You can add some protein powder in this Greek yogurt cookie recipe. Just replace some portions of the almond flour with the protein powder but not all of the almond flour, otherwise the cookies will tend to turn out to dry.

As a rule, replace 30 grams (or ⅓ cup) of almond flour with protein powder. Adjust it with more flour if the dough turns out to be sticky (in case you are using whey) or with more yogurt if it’s turning thick (in the case of vegan protein or casein).Unlike My Chocolate Protein Cake recipe, this will use Greek yogurt as an main ingredient on the list.

Making cookies without dairy products is very simple and easy. All you have to do is replace Greek yogurt with any plant based alternative you prefer in your diet, just that it should have a firm and thick texture. Remember, this protein cookie recipe will only work with a yogurt of thick texture

Start by combining Greek yogurt with the egg, granular sweetener(erythritol), vanilla extract and a hint of salt in the large mixing bowl. Gradually add in your almond flour and mix it until you get a smooth cookie dough. Optionally you can add the chocolate chips in it now.

Scoop out the dough and shape it into 9 cookies. Transfer these cookies to a parchment paper covered baking sheet, making sure to put some space between the cookies. Bake them in a hot oven for 10 to 15 minutes. Let them cool before serving

Let the cookies cool after baking them at room temperature, best if you rest them over a baking rack. Now, once cooled, seal your cookies in an airtight food container or in a freezer zipping bag for upto a period of 3 months. Before serving, reheat them for a couple of minutes in the oven
