This makes it not only delicious but also satisfying and nourishing. Banana bread with protein powder is here to revolutionize your baking game and elevate your snacking experience to new heights. It may sound like a bold statement but I have been trying to make high protein banana bread with different recipes for a very long time.
Sometimes the texture disappointed, sometimes the taste. My protein banana bread turned out dry and depressing. The reason for all of this was me using whey, which is not a good protein powder to use for baking. It dries out when heated but after almost 10 flops, I have reached the recipe of the perfect moist protein banana bread with no added sugars and oil!
Secrets To Make The Perfect Moist Banana Bread With Protein Powder
If you have some familiarity with protein powder baking, you would probably know that protein powder desserts like chocolate protein cake or any other dessert made with protein powder tends to turn out dry. If you use whey, this is bound to happen as whey turns out to be dry when heated, but this time, it ain’t happening because my banana bread recipe is different and comes out to be moist and soft as it didn’t have any protein powder added!
Stick around as I am going to let you know some secrets that will help you elevate your banana bread baking game.
Secret 1: Add Plenty of Moisture
The first secret to not let your banana bread dry out is to add a good amount of moisture in the batter. Leaving bananas aside, my recipe is using one egg, egg whites and our favorite, Greek yogurt.
- Bonus Tip: When it comes to choosing your bananas for this recipe, opt for very ripe ones as they will add more moisture to your batter and the more riper your bananas are, the more sweeter they are, making them perfect for a recipe of banana bread without any added sugars
Secret 2: Protein Powder Comes At Last
It is a fact that over mixing your protein powder tends to ruin your dessert game. That is why in this recipe, you will use your protein powder in the end right after mixing the flours in the wet mixture and fold in your protein powder gently rather than mixing it.
Secret 3: Bake Less!
For this recipe, I lowered the temperature to 170ºC (340ºF) and the baking time to around only 5 minutes. Just keep in mind that every oven is different and you may need to adjust the time. To do this, keep an eye on your protein banana bread after it has been in the oven for about 20 minutes and your desserts ready if a toothpick inserted inside comes out clean.
Ingredients For Protein Banana Bread Recipe
Here’s the list of all ingredients that you require to make this delectable banana bread without any sugars and oil. I am also providing you a list of alternatives, just in case:
- Ripe Bananas: To make the perfect bread, use riper bananas as they add moisture and sweetness to your bread. These are also softer, sweeter and tastier.
- Egg: Egg will make your bread moist and flavorful without the need of oil. For vegans, use flaxseed egg or chia egg as an alternative.
- Egg Whites: For a low calorie count in the bread, replace your one whole egg with two egg whites as these are packed with proteins and poor in carbs but feel free to use eggs in this recipe.
- Nut Butter: Natural almond butter is my preferred choice as it gives the protein bread flavor and texture without tasting strong as compared to peanut butter. For a nut-free recipe, use creamy peanut butter, cashew butter, walnut butter, tahini or sunflower seed butter.
- Greek Yogurt: Protein baking requires moisture. For these reasons, we use greek yogurt in this recipe. For low calories, use non fat yogurt. Substitute it with full-fat yogurt, Skyr, soy yogurt, coconut yogurt if you’re lactose intolerant and can’t eat dairy products.
- Almond Flour: This recipe is using defatted almond flour as it is low in carbs and high in protein and stands as a good replacement for starches. Full-fat almond flour can be used but it will add more calories. Replace with more oat flour or your favorite flour.
- Protein Powder: This healthy protein banana bread with any protein powder you have in your home. Whey, casein or any other alternative can work, but you will need to adjust your batter according to the type of powder you use.
- Baking Powder: This will help our protein bread to rise and come out to be moist and delicious.
- Spices And Flavors: Use a mix of vanilla extract and ground cinnamon to make this healthy dessert irresistible. Don’t forget to add a hint of salt to elevate the flavors of your bread. Vanilla extract can be left out if you use vanilla protein powder.
- Additional Ingredients: Add any mix-ins you want like blueberries, sugar free chocolate chips, pieces of walnuts or pecans as these will also add a crunchy texture to your bread.
Suitable Bananas For The Best Banana Bread
When it comes to making the best banana protein bread, the key ingredient is, without any doubt, ripe bananas. The natural sweetness and moisture from overripe bananas not only enhance the flavor of the bread but also contribute to its dense and moist texture. While many recipes call for perfectly yellow bananas, it’s actually those brown-spotted or even slightly mushy ones that will elevate your banana bread game.
Ripe bananas are crucial as they provide a more strong banana flavor and make sure there is a softer, more tender crumb in your protein-packed bread. As bananas ripen, their starches break down into sugars, resulting in a sweeter taste profile that can enhance the sweetness of your bread without any added sugars.
Best Protein Powder For Banana Bread
This moist banana bread recipe is using vanilla whey protein powder, but you can easily substitute it with vegan protein powder, casein, or a combination of whey and casein. The only difference which will occur is that your batter will require different amounts of moisture. As a general fact, vegan protein powder or casein tend to absorb plenty of liquid so you may need a bit more milk. In contrast, whey will dissolve very easily and you won’t need any milk.
When it comes to the flavor, feel free to use any flavor you like and prefer such as vanilla, cinnamon, peanut butter or even unflavored protein powders will work in this recipe! Just keep in mind if you use unflavored powder you may need to adjust the sweetness level by adding some honey or maple syrup.
Variations For Bread Recipe
