Did you know you can also make cottage cheese chips in the microwave?

This recipe is incredibly simple, using only one ingredient: full-fat cottage cheese. While the recipe itself is uncomplicated, there’s one substantial element: the fat content of your cheese. Using low-fat or non-fat cottage cheese will result in dry, tough chips. I’ve experimented with both 0% and 2% fat versions, and unfortunately, the chips did not turn out crispy. For the best results, choose full-fat cottage cheese, and ideally, opt for small curd.

Cottage cheese chips are delicious, enjoyed simply or seasoned with a few key ingredients. Remember, cottage cheese is already quite savory, so be aware with the use of salt and spices. Here are some ideas to get you started:

  • Salt and Pepper: A simple pinch of salt and freshly ground black pepper is all you need.
  • Spicy: Mix cottage cheese with a third teaspoon of smoked paprika, a pinch of chili powder, and a pinch of cayenne pepper.
  • Ranch: Stir in a small amount of ranch seasoning for a flavorful twist.
  • Onion: Season the cheese with a third teaspoon of onion powder and kosher salt before baking.
  • Garlic: Add a third teaspoon of garlic powder and a touch of lemon zest for a garlicky flavor.
